Last week, I showed you my Valentine Breakfast Tablescape and hinted at a yummy breakfast to come. This year I’ll be serving these easy gluten free red velvet waffles with vanilla bean ice cream hearts!
If you follow me on Instagram, which you should!, then you know that our back to school tradition is a little scoop of ice cream on a homemade pancakes the first day of school. I’ve incorporated that tradition with these gluten-free red velvet waffles.
I’m not sure that anyone makes pancakes or waffles from scratch anymore so everyone is able to make this Red Velvet Waffle recipe. Simply take your favorite waffle mix and add cocoa powder and red food coloring or red food paste. The proportions I used were 1/4 cup Cocoa powder, 10 drops of food coloring and 2 tbs of water to 1 1/2 cups of mix.
Yes. Red velvet is just the addition of cocoa powder and red food coloring. When we were taking these photos my photographer Audrie commented that most people do not know that red velvet is just cocoa powder and red food coloring. I told that to my middle daughter when she got home and reached for one of these yummy waffles. She said “what!?! My whole life has been a lie! Too funny!)
My favorite gluten-free waffle mix is from Trader Joe’s. I also really love the Stonewall kitchen pancake and waffle mix. Whenever I make waffles instead of pancakes with these mixes I substitute vegetable oil for the melted butter. It makes them crispy and they come out of the waffle machine perfectly every time.
To make the heart ice cream molds, I used this silicone heart shaped mold. I picked mine up at the dollar spark in target several years ago but this one is almost identical. You could also use a heart shaped muffin tin and line the cups with plastic wrap so that you can pull the heart out of the mold easily.
Simply placed one on top of your stack of red velvet waffles and serve immediately with your favorite maple syrup.
I have to mention this soft and cozy sweater that I’m wearing in this post and the Valentine’s breakfast tablescape. I forgot to talk about it there! If you don’t already have a favorite sweater that you can wear on Valentine’s Day and really anytime, you need this one! It is truly the softest sweater I’ve ever owned. I’ll definitely be wearing it past the 14th!
