If you follow along on Instagram, you know I just returned from an amazing vacation with my family. I’ll be sharing a round up of our adventures in London and Paris soon.
We had wonderful experience and some great food. Traveling always leaves me craving simple, fresh food. So that is what’s on the menu for this week. Oh, and something very easy! Jet lag is sure to set in soon. (insert frowning emoji)
Tonight we’ll be having an Avocado Bar like the one I served at this fun party a few weeks ago.
Cool, smooth avocados, fresh toppings like red cabbage, black bean and corn salsa and freshly made salsas. I love adding sunflower, pumpkin or pomegranate seeds for a bit of crunch.
One of the greatest things about an Avocado Bar is that you don’t have the make a thing if you don’t want to. Many stores have local, fresh salsa and hopped vegetables so most of the work is done for you. More like prepping than cooking, which is always great in the summer.
My girls love choosing their own toppings. This is great for a Meatless Monday, too. I’ll be making a batch of my White Peach Basil Sangria tonight as well because it’s supposed to be over 100 degrees ever day this week in Dallas.
