Ah, summertime!! I always feel like there is so much more time to do the things I enjoy like cooking! Today, I’m sharing all my favorites in one post for the Best Recipes for Summer.
My Watermelon Gazpacho is by far the most popular recipe on AWL. One summer it went viral and had so many hits that my site crashed! Whether you serve it as a Watermelon Shooter edged in Tajin or in a bowl, it tastes like summer!

Chopped Summer Salad with Honey Lime Vinaigrette
I’ve always told my girls that we should eat the rainbow at most every meal and this beautiful salad meets that requirement! I chose each of the ingredients in my Chopped Summer Salad with Honey Lime Vinaigrette because they represent the best of summer to me. I love adding berries to salads for the sweetness they add. I used spinach as our base but you can use any green that you would like. simply give it a rough chop so it is in bite-size pieces.
If you like ceviche, you’ll love my Classic Mexican Ceviche! We are headed to the lake this weekend and I’m planning on making a big batch. In fact, I’m craving it now just thinking about it! I like to get my fish locally at Rex’s Fish Market but also have good luck at Central Market, TJ’s Seafood and Lover’s Lane Seafood.
My Classic Peach Cobbler is another recipe that gets a lot of traffic. You can make this recipe gluten-free or with traditional flour. It’s always a crowd-pleaser! It’s so easy to make and can be made ahead. It’s best served hot with your favorite vanilla ice cream, of course!
Summer isn’t complete without My Skillet Cherry Pie! Topped with pie crust stars, it’s just heavenly! I purchased this cherry pitter and the girls love to help me with this part of the prep. Note: Be sure to purchase almost twice the cherries you need if you have kitchen helpers! Ha! 🙂

You know I love a great margarita and this Coconut Margarita is a reader favorite, too! Cool and creamy with the perfect touch of lime, it’s really refreshing. I created it after having one at the Palmilla in Cabo.
Highlighted with fresh herbs, the Southside Fizz is a light and refreshing summer cocktail. It might become the signature welcome cocktail for the lake! It can also be made as a mocktail.
My Raspberry Frose is another perfect for summer cocktail. It is also easily modified to be a mocktail!
