It’s no secret to anyone who knows me. I could eat soup for every meal. This Chilled Cantaloupe Soup with Raspberry Sauce is often requested by my girls. It is a great starter or light lunch in the summer. We’ve even and it for breakfast! I’ll be making it tonight as a “treat” for first day of school dinner.
- 4 c cubed cantaloupe (1 full cantaloupe)
- 1 c Vanilla yogurt
- ¼ c Light Agave Nectar
- 1 pint Raspberries
- ¼ c water
- Place cantaloupe, yogurt and Agave Nectar in blender and blend until smooth.
- Rinse blender pitcher and place raspberries and water in blend until smooth.
- Pour cantaloupe soup in to a bowl and top with a swirl of raspberry sauce.
This has been my favorite shirt this summer and it’s on major sale now! (Love when J.Crew has a sale! – use code REFRESH for an additional 30% off! That makes this shirt $42!!) I get so many compliments on it. As you know, I’m a bit of a neutral gal but this has been so fun. My versatile Longchamp Tribute bag has been an even better purchase than I had hoped! I love that I don’t have to change bags to go from casual to dressier occasions. Just pull out the cross body strap and I’ve got a new bag! The ecru color has been great for summer but I’m planning on carrying it through the fall and winter as my Winter White accent!
