It’s no secret to anyone who knows me. I could eat soup for every meal. This Chilled Cantaloupe Soup with Raspberry Sauce is often requested by my girls. It is a great starter or light lunch in the summer. We’ve even and it for breakfast! I’ll be making it tonight as a “treat” for first day of school dinner.
- 4 c cubed cantaloupe (1 full cantaloupe)
- 1 c Vanilla yogurt
- ¼ c Light Agave Nectar
- 1 pint Raspberries
- ¼ c water
- Place cantaloupe, yogurt and Agave Nectar in blender and blend until smooth.
- Rinse blender pitcher and place raspberries and water in blend until smooth.
- Pour cantaloupe soup in to a bowl and top with a swirl of raspberry sauce.
- Enjoy!
