Now that I’m truly finished shopping, I’ve begun to focus more on my Christmas menus. Better late than never, I always say. Actually, we have a bit of a tradition. We always do Mexican on Christmas Eve and I always do a Beef Tenderloin on Christmas Day.
This year I’ll be adding a Cranberry Orange Margarita to the menu (non-alcoholic for the kids, of course). You know I love a good Margarita and it’s been so very warm here in Texas I’ve been craving one. I’m on a bit of an Cranberry Orange Kick so why not!?!?

Christmas Eve Menu – I keep this easy as there is always a long night ahead for “elves.”
Tamales, guacamole and their fabulous Anniversary Salsa from Central Market – Try a local restaurant if you don’t have Central Market
Cranberry Orange Margarita (recipe below)
Holiday S’mores
Christmas Morning Menu
Raspberry French Toast Strata (I’ll substitute Cranberries and Orange Zest!)
Fresh Fruit Salad
Hot Cider and Tea
Christmas Dinner
Rosemary Garlic Beef Tenderloin
Brown Sugar and Bacon Green Bean Bundles
Coconut Macaroon Hot Fruit Compote
Ginger Spiced Orange Cranberry Sauce (this would also be good in the dessert below!)
Eton Mess from Ina Garten’s How Easy is That with meringue kisses from Tart Bakery (again a bit of a cheat with everything else there is to make!)
- 5 c Cranberry Juice
- 4 tbs Sugar (not needed if all you can find is Cranberry Cocktail Juice)
- ¾ c Silver Tequila
- 1 c Fresh Lime Juice
- 1 c Fresh Orange Juice
- ¼ c Grand Marnier or other Orange Liqueur
- Sugar and Orange Zest for the rims
- Mix all ingredients in a pitcher.
- Rub an orange slice on the rim of the glass.
- Dip rim in sugar and then orange zest.
- Fill glass with ice.
- Pour in Margarita.
- Enjoy!
