Grilled Artichokes
Prep: 5 minutes Cooking Time: 40 minutes
  • 2 artichokes
  • 1 stick of butter (melted)
  • 2 cloves of garlic
  • sea salt
  • fresh ground pepper
  1. Preheat the grill to 350 degrees (We prefer the Green Egg.)
  2. Fill a large pot with water, add 2 tsp salt and bring to a boil.
  3. Prep the Artichokes:
  4. Cut off the very tip.
  5. Trim the tips off of the leaves.
  6. Place artichokes in boiling water.
  7. Boil for 20 minutes.
  8. Peel and finely mince fresh garlic cloves.
  9. Add to melted butter.
  10. Salt and pepper this mixture to taste.
  11. Remove artichokes from water and drain.
  12. Slice the artichokes in half from the stem to the top.
  13. Place on hot grill 7-10 minutes on each side.
  14. Remove from grill and brush with garlic butter.
  15. Serve with more garlic butter or an aioli for dipping. (I love Stonewall Kitchen Horseradish Aioli)
