Chocolate Chip Cheesecake Cupcakes
 
 
Serves: 36 cupcakes
Ingredients
  • Combine and set aside:
  • 2-8 oz package of cream cheese, softened room temperature
  • 1-12 oz package of chocolate chips
  • 2 egg, beaten
  • ⅔ c sugar
  • ¼ tsp salt
  • Mix together:
  • 3 c Cup 4 Cup, gluten free flour
  • 2 c sugar
  • ½ c cocoa
  • 2 tsp baking soda
  • 1 tsp salt
  • 2¼ c water
  • ⅔ c oil
  • 2 tsp vanilla
  • 2 tbs white vinegar
Instructions
  1. Preheat oven to 350 degrees.
  2. Line 3 1 dozen cupcake pans.
  3. Place 1 tbs of the Chocolate Chip Cheesecake batter in each cupcake liner.
  4. Fill level with Chocolate Batter.
  5. Bake for 45-55 minutes, until toothpick comes out clean.
  6. Cool.
  7. Decorate with buttercream icing and chocolate chips, if desired.
