I was a scratch baker before all of our food allergy diagnoses. I especially loved making birthday cakes like these.
Hey…I warned you I was crazy about birthdays….
All the recipes I found for cakes had mixtures of flours and starches I’d never used before and some ingredients I’d never heard of either. What is Xanthan Gum anyway?!?! Do you eat it? I was not about to begin the process of mixing my own flours. Kudos to those who do! Way too intimidating for me.
On one trip to the grocery store I saw this beautiful box. It changed everything.
It has been a life saver! Best. Gluten Free. Cake Mix. Ever. If you are looking for a cake that has all the flavor and moistness of “regular” cake and the color a yellow/vanilla cake should be, this is the one! I know. I tried a lot of really bad ones. It also works very well with those cute Cake Pop making machines.
In fact, all of the 123 Gluten Free products we have tried are wonderful. Dinner Rolls, Pound Cake like my great-grandmothers, Chocolate Cake, Cookies, Brownies. Their mixes are designed with food allergies in mind and many can be made dairy, soy or egg free as well.
All are wonderful and no one can tell the difference. In fact, when I bake for a party, I only tell those who need to know they are gluten free. Platters are clear every time and no one is the wiser!
