With so much talk about the Royal Wedding, I thought I’d share this great recipe hack with you today for Gluten Free Lemon Elderflower Cake with Lemon Buttercream Icing.
I created this lemon recipe hack for my two of daughters’ birthday cakes. Yesterday baked it with the elderflower addition in cupcake form. It is so good.
You may recall I love elderflower liquor and shared an elderflower cocktail recipe last spring. If you’re not up for baking definitely make this Sparkling Elderflower cocktail to toast the newly weds Saturday.

- 1 Vanilla Cake Mix - I prefer King Arthur Gluten Free Vanilla Cake Mix
- 1 lemon - zest and juice
- 2 tbs St. Germain Elderflower Liquor
- Make cake according to directions on the box adding juice from one lemon, lemon zest, and elderflower liquor during the milk step.
- Bake as directed.
- Ice with Lemon Buttercream Icing. Use the Wilton recipe and substitute juice from one lemon for the milk.
