Ok…one last splurge for the holidays. My mom’s Black Eyed Pea Dip. I’m not sure where the tradition of eating black eyed peas for luck originated…if it’s Southern or something else, but this dip is our family tradition. I hope you enjoy it!
Happy New Year’s Eve!
- 2 cans Black Eyed Peas with Jalapeños (of course!)
- 4 c Monterrey cheese, grated
- ½ stick of butter
- 1 white onion, chopped
- 1 small can green chilies, if desired
- Drain cans of Black Eyed Peas.
- Melt butter in large saute pan.
- Add chopped onions and sauté until clear.
- Add grated Monterrey cheese.
- Stir until melted.
- Add Black Eyed Peas.
- Stir until incorporated.
- Serve with Frito Scoops or thick corn tortilla chips.
