Today, I wanted to pop in with some healthy snacks to inspire us all to get creative with “after school” snacks with everyone home all day. One thing I am enjoying about being home is cooking more because I have more time.
I did a quick run to the grocery store yesterday for a few items but pretty much other than that we’ve all been home for over a week. We are homebodies so the slower pace is ok with us. I know we’ll all have our moments but we know this is what is right for our city and country.
Yesterday was a bit crazy for me. Trying to get everyone’s technology working for their new homeschool/online school situation and preparing for shelter in place that began at midnight had me a bit disoriented. So much so, I wondered all day where I’d put my coffee…we finally found it late last night in the microwave full and foam still on top! My girls and I got a good laugh!
Anyway, these simple snacks are not only satisfying to eat but to make as well. I love knowing I’m putting good food on the table for my family and I guess you feel the same way.

Strawberry Avocado Salsa – This is just the right amount of sweet and spicy!
Very Berry Yogurt Popsicles – These are a fun breakfast, too!
Acai Bowls – The girls love to make these and top with their favorite fruits.
Jalapeno Sausage Cheese Balls – These can be made and frozen to pull out a few at a time!
Kale Chips – My girls LOVE these and ask for them all the time!
Spring Charcuterie Board – We love this for after school snacks and it’s so easy! These are just a few ideas but feel free to include your favorites, too.
Homemade Guacamole – This recipe has pomegranate seeds but you can leave them out if you’d like.
