It’s National Pancake Day! Here’s a twist for you from Denmark – Ebelskivers. These fluffy treats are a fun take on pancakes. A triple-cross between a pancake, donut hole and a jelly donut – YUM!
This Ebelskiver pan from Williams-Sonoma was a gift from my mother-in-law to my husband. He loves to make a great breakfast on the weekends. I highjacked it this time.
The recipe can be a bit overwhelming so I wanted to see if I could make it easier. I used Cup4Cup Pancake Mix and folded in frothy egg whites. Not much much intimidation that way and a lot less measuring. For this I used 1/2 the mix and 2 egg beaten egg whites. I did it by hand because I was too lazy to get the mixer out. It took no time and was a great shoulder work out. (wink, wink!)
Brush each well with melted butter.
Use a tablespoon to place mix in each well, beginning in the middle and working clockwise – so you can remember where you started when it’s time to add filling, more mix and then turn.
I used my favorite Bonne Maman Cherry Preserves for the filling. Next I’ll be trying a tangy Lemon Curd!
They key is to get enough of the batter on the top to make them round and fluffy as well has hold in all the filling.
Turn each one and cook for an additional 3-5 minutes.
Sprinkle a bit of powdered sugar on the top.
Eat them quickly…before someone else does! These would be a great dessert filled with chocolate or for a holiday breakfast as well.
