It’s been awhile since I shared a recipe. Honestly, I’ve been cooking a bunch of favorites because we have become a very busy household this year with not as much time for developing recipes. I think the Bitty Girl’s real homework and the activities of two teenagers has hit home! I created this Mexican Cauliflower Rice Bowl recently and posted it on Instagram Stories as I made it. I got so many requests for the recipe!
It is super simple. I even made it on spring break one night for dinner it is so easy and everyone really likes it. It is low carb and low calorie, too. The cauliflower really seems like rice in this recipe and is truly satisfying. This is a great make ahead recipe and let everyone serve themselves on a busy night as it is great room temp.
I couldn’t find cauliflower rice then so I just “riced” it myself but chopping it in ultra small pieces with my favorite knife for mincing. Took me only about 10 minutes and so worth it. I think you could also put it in your food processor in small batches and pulse it.
Simply saute the cauliflower in a bit of olive oil until it is becoming tender. Brown ground turkey breast with chili powder. Then layer your ingredients in your bowl. Voila! Easy, healthy and tasty dinner! I’ll be doing this with Teriyaki Chicken and broccoli soon. I think the toppings are endless. Add a bit of quinoa and more black beans and you have a Meatless Monday option, too.
- 1 bag of cauliflower rice (or 1 head minced)
- 2 tbs olive oil
- 1 lb ground turkey breast
- 2 tbs of chili powder
- 1 tsp Tajin
- 1 can black beans, drained and rinsed
- 2 avocados, diced
- 1 lime, sliced
- 1 jar fresh salsa (I love Wrights!)
- additions: diced jalapenos, cilantro shredded carrots anything you like!
- Saute the cauliflower in a bit of olive oil until it is becoming tender.
- Place in a bowl.
- In same pan, brown ground turkey breast with chili powder and tajin.
- Then layer your ingredients in your bowl.
- Enjoy!
