Breakfast is a struggle around here. Maybe because I’m not a morning person. Maybe because I like someone else to make my chilaquiles or huevos rancheros….while I’m on vacation…in Mexico. Well, that’s not a typical morning for me!
Once I have made breakfast and lunches for everyone and they are out the door, I want something simple. Because this is what my kitchen looks like. You can’t see the sauce pan or the frying pan but they are there.
Smoothies are my go to. They fill me up and give me energy to do whatever is next on my always full agenda.
This is my favorite recipe. You can vary it by changing out the fruit, using coconut water instead of fresh orange juice, kale instead of spinach. Believe it or not, the girls like this one, too.
I love Amazing Grass’ Amazing Meal. It is a raw, plant-based nutritional supplement, ie protein powder. I like every flavor I’ve tried.
Original gives it a bit of a green flavor but not strong at all. Vanilla Chai is a bit spicy. I like it in the Fall. I’m on a Pomegranate Mango kick right now. Fruity but in a good fresh way. Not too sweet. That’s no bueno. Pop it all in your blender. I love my Vitamix! It makes the best smoothies and frozen drinks!
- 1 cup of ice**
- 1 cup of fresh orange juice
- 1 cup of raspberries
- 1 cup of blackberries
- 1 scoop of Amazing Grass Amazing Meal Pomegranate Mango
- 2 cups fresh spinach
- **If you use frozen fruit, don't add ice.
- All ingredients to your blender of choice. I prefer the Vitamix.
- Blend until smooth.
- Pour in your favorite tall glass.
- Enjoy!
