Appetizers are always difficult for me. My default is a charcuterie board. It’s beautiful served on this board. It’s now become my “signature” item I serve and bring to events so I need new go-to. Another easy appetizer I enjoy making but often forget about. Today I’m sharing two Baked Brie recipes your friends and guests will love: Pumpkin Pie Baked Brie and Caprese Baked Brie.
They are super simple and easy to assemble. The Pumpkin Pie Baked Brie uses the same pumpkin pie mix from the Salted Caramel Apple Crisp (which would be a great Thanksgiving dessert!). The Caprese Baked Brie is a warm take on the Italian classic. Fresh garlic and grape tomatoes baked in a tender crust are amazing.
Use my Gluten Free Pie Crust for the Pumpkin Pie Baked Brie, which can be made early and refrigerated for 4-6 weeks or frozen. I’ll be making mine for the holidays this week. If you don’t have to be gluten free, the ready made pie crusts or crescent dough are great for this as well. The secret to moving them from the baking sheet to your serving platter? This giant spatula. It’s great for moving pizzas, large pieces of fish and rustic pies, too.

SHOP THE POST
- 1 Pie Crust
- 1 large wheel of brie cheese
- ½ c brown sugar
- ¼ c Pumpkin Pie Mix
- Preheat oven to 350 degrees
- Roll out pie crust
- Place brie in the middle of the crust
- Top brie with pumpkin pie mix and then brown sugar
- Wrap crust around brie and toppings
- Place on parchment paper topped baking sheet
- Bake until golden brown, approx. 35 minutes.
- Serve with sliced Honeycrisp apples
- 2 tbs olive oil
- 4 cloves of garlic, minced
- 1 pt cherry or grape tomatoes
- 1 bunch fresh basil
- Preheat oven to 350 degrees
- Place brie on parchment lined baking sheet.
- Bake for 25 minutes.
- While brie is baking, saute garlic and tomatoes in olive oil until soft.
- Remove brie from the oven and place on serving platter.
- Top with tomato garlic mixture and chopped basil.
- Serve with crackers or bread slices.
