Citrus is at it’s best right now and the perfect punch to a quick salad. Our crazy winter weather has me craving salads instead of the soups I normally want in January and February! The oranges, grapefruits, lemons and limes are fresh and bursting with flavor. I hope you enjoy this Winter Citrus Salad with a spicy vinaigrette.
I used butter lettuce as the base because my girls love it. The tenderness of the leaves with the punch of citrus and creamy avocados are a great combination. The dressing has a bit of sweet and heat in it. The red pepper flakes added the hint of heat. It is a great addition to the other flavors. You can definitely leave it out or put some in a little bowl so those that want it can add to their liking.
To supreme (section) the grapefruit, you need a very sharp knife. My favorite is this santoku knife. I have several of these as I use them for everything. You will first cut the ends off of the grapefruit, then slice the peel off in sections. Supreme the grapefruit over a bowl so that you catch all the juice and can use it in the dressing linked above. You will next cut right next to the membranes on the sides of each section and voila! A perfectly sectioned grapefruit!
- 2 avocados, chopped
- 2 grapefruit, supremed
- 2 heads butter lettuce
- 2 green onions, sliced thin
- ½ c olive oil
- ¼ cup Champagne vinegar or white wine vinegar
- ½ c fresh grapefruit juice
- 2 tbs honey
- red pepper flakes to taste
- Supreme grapefruit.
- Chop avocadoes.
- Tear lettuce.
- Arrange on a plate.
- Combine remaining ingredients to make dressing.
- Toss and enjoy!
We had this great salad with baked salmon last night. I think it’ll be on rotation this spring as well as everyone loved the combination of flavors.
