As much we begin the new year and may have the goal of cooking more, I thought you might need some inspiration. I know I have needed it! I’ve rounded up our family favorites for you today in 21 Easy Meals your family will love.

These recipes are a mix of meals that are quick and easy and several that will be great as left overs as well. My friend Tonia at SortedOut has created a great printable meal planner/grocery list that will help you organize your meals and make online grocery ordering much easier. I hope this is a help to you as well.

1 Mexican Cauliflower Rice Bowl You can also use white or brown rice.
2 Spinach and Tomato Quiche – Adapt this recipe to what you have in the refrigerator! Turkey, onion, bell peppers, cheese…whatever!
3 Breakfast Bowl – This is not just for breakfast! You can use your favorite granola for this, too.
4 Slow Cooker Minestrone – I love adding fresh spinach at the end for good greens!

6 Slow Cooker BBQ Beef Brisket
7 Slow Cooker Brisket with Onions – This is one I have featured on my Quick Recipes Highlight on Instagram. I get asked for it all the time so I saved it there. Pardon the iPhone photo! Cut three yellow onions into thick pieces and place on bottom of slow cooker. Place the brisket on the onions fat side up. Pour one bottle of Stubbs Beef Marinade on top add Wicker’s BBQ Marinade and baste over until just covered. Cook on high for 4 hours or low for 8 hours. Serve with your favorite salad.

9 Salt Baked Herbed Salmon from Genius Recipes from Food52 with a simple Arugula Salad with Olive Oil and Lemon Juice
10 Tortilla Soup – My girls request this satisfying soup all the time. I serve it with grated cheese, avocados, fresh tomatoes, jalapenos and lime wedges so everyone can personalize their bowl.
11 Traditional Mexican Fish Ceviche – Serve with guacamole and chips for a super simple, fresh meal
12 Lemon Rosemary Roasted Chicken with Carrots and Potatoes – This one is also on Quick Recipes on Instagram stories. Zest and Juice 2 lemons, combine with 8 sprigs of chopped rosemary, salt, fresh black pepper, 2 tsp of chopped garlic, 2 tbs of olive oil and rub under the skin of the chicken saving a bit for the outside of the skin too. Fill the cavity of the chicken with rosemary, cubed onion, left over lemon halves. Place chicken, halved carrots and cubed potatoes in a roasting pan. Pour 2 cups white wine and 32 oz of chicken broth over the chicken and vegetables. Drizzle everything with olive oil and season with salt and pepper. Roast at 425 degrees for 90 minutes or well done. Be sure to serve this with rolls or some kind of bread to dip in the amazing sauce this makes!
13 Mediterranean Salad with Rotisserie Chicken – One of the first recipes I posted and still a reader favorite!
14 Quinoa Edamame Lettuce Wraps – One of my girls requested these last week. This is made from just a few ingredients. We always have quinoa on hand and edamame in the freezer.
15 Apple Arugula Sausage Strata – Another recipe you can adapt the toppings in to what your family likes!
16 Giada’s Turkey Kale Soup – This recipe makes a lot and is great for left overs.
17 Artichoke, Hearts of Palm, Quinoa Salad – Serve with a Rotisserie Chicken or as a Meatless Monday!
18 Chili Lime Tacos – You can even do these with Rotisserie Chicken. This is one of my first recipes so pardon the iPhone photos! I used to cook and photograph at the same time during dinner rush hour! How did I do that!?!?
19 Avocado Bar – This is a fun, no cook, build-you-own meal.
20 and 21 Classic Charcuterie Board and Spring Charcuterie Board – These are another great, no cook meals. My girls love when we do this and always want to help choose what goes on the boards. Many hands make light work!
